Lavender Blue Lemonade

INGREDIENTS
- 3 cups blueberries
- 1 cup juice from 4 large lemons, reserve the peel
- 1/2 - 3/4 cup sugar
- 1 - 1 1/2 tsp fresh or dried lavender buds
DIRECTIONS
- Using a 4 quart bowl, use the back of a wooden spoon to lightly mash blueberries. And the lemon juice to bowl along with the sugar.
- In a saucepan, bring water and lavender to a boil. Pour through a strainer and pour into the lemon juice mixture to dissolve sugar.
- Cut the lemon rind into rings and add to the lemonade.
- Cover and refrigerate 2-3 hours before serving.
- Remove and discard rinds and strain through a mesh sieve into a pitcher.
