Lavender Blue Lemonade
  • 3 cups blueberries
  • 1 cup juice from 4 large lemons, reserve the peel
  • 1/2 - 3/4 cup sugar
  • 1 - 1 1/2 tsp fresh or dried lavender buds
  1. Using a 4 quart bowl, use the back of a wooden spoon to lightly mash blueberries. And the lemon juice to bowl along with the sugar.
  2. In a saucepan, bring water and lavender to a boil. Pour through a strainer and pour into the lemon juice mixture to dissolve sugar.
  3. Cut the lemon rind into rings and add to the lemonade.
  4. Cover and refrigerate 2-3 hours before serving.
  5. Remove and discard rinds and strain through a mesh sieve into a pitcher.
This is a wonderful variation of the beloved lemonade we love to drink in the summertime!
