Lavender Sponge Cake

  • 6oz self raising flour
  • 6oz margarine
  • 3oz lavender caster sugar
  • 3oz caster sugar
  • 1 tsp baking powder
  • 3 eggs
  1. 1-cream margarine in a large mixing bowl with a hand held mixer
  2. 2- sift in dry ingedients, then tip the lavender flowers from the sieve in too
  3. 3- add eggs and mix very well to combine thoroughly
  4. 4- grease two sandwich tins with butter and divide the mixture equally
  5. 5- place into a pre-heated oven at 190c for 25-30mins until firm to the touch
  6. 6- remove from the oven and leave to rest in the tins for 5 mins
  7. 7- remove sponges from tins and cool completely on a wire rack
  8. 8- once cool, fill and decorate as you please-yum!
a slight adjustment to an ordinary vanilla sponge recipe, fabulously different!
