Layered Salad

INGREDIENTS
  • Servings: 4-6
  • Preparation Time: 10-15 minutes
  • a head of your choice of lettuce, or a bag of supermarket salad
  • 1 c. cauliflower, cut in thin slices
  • 1/2 red onion, thinly sliced
  • 1 c. English peas, blanched
  • 1/2 c. mayonnaise or to taste
  • 1 T. sugar or to taste
  • 1/2 c. sharp cheddar or to taste
  • 1/2 c. crisply fried bacon bits or to taste
DIRECTIONS
  1. In a large glass bowl (the layers are pretty), put the lettuce. Top lettuce with a layer of cauliflower, then o onion, and top with peas. Using a spatula, spread mayo evenly over top of veggies. Sprinkle with sugar. Spread cheese evenly over top of mayo layer then sprinkle with bacon bits. Cover with lid or plastic wrap and refrigerate until serving. May be kept overnight. Mix well before serving.
RECIPE BACKSTORY
Layered salads were very popular back in the 1950's to take to family reunions and church potlucks. This recipe is my mother's recipe. Our family enjoys it so much we just call it "Favorite Salad".
