Lazy Lasagna Chili
  • 1 cup Zucchini, Coarsely Chopped
  • 1/2 cup Onion, Coarsely Chopped
  • 1 lb Sweet Italian Turkey Sausage (4 Links)
  • 2 Garlic Cloves, Crushed
  • 26 oz Spaghetti Sauce
  • 2 cans Beef Broth
  • 1 cup Water
  • 1 1/2 cup Uncooked Pasta Nuggets (radiatore)
  • 2 Tbsp Snipped Basil (optional)
  1. *Coarsely chop zucchini and onions using food chopper, set zucchini aside
  2. *Remove casings from sausage, discard casings (skip this step if you find regular sweet turkey sausage)
  3. *Heat 4 quart casserole over medium heat until hot
  4. *Add sausage, onion, and garlic and cook 8-10 minutes or until no longer pink, breaking sausage into crumbles; drain
  5. *Add spaghetti sauce, broth, and water and bring to a boil
  6. *Stir in pasta, reduce heat to simmer, uncovered, 7 minutes
  7. *Stir in zucchini into chili, cook 2-4 minutes or until zucchini is tender
  8. *Remove from heat and stir in basil, if desired
  9. *Ladle soup into bowls and serve with garlic crostini, if desired
