Lazy Perogie casserole

  • 3-Lg. onions,chopped; 1/2 stick butter; 1-pkg. lasagna noodles, cooked el'dente; 3c. shredded cheddard cheese; 1- lb. cooked crumbled bacon; 4c. Instant mashed potatoes (made up per box directions)or left overs;some chopped parsley.
  1. Pay attention to layers, some are 1/3rd and others 1/4th. In a large fry pan brown onions in the butter. Add parsely. Cook and drain noodles, make up potatoes, cook,drain and crumble the bacon. In a 9x13 baking dish, layer the following. Start with 1/4th of the butter onion mix. Next, 1/4th of the noodles. Next, 1/3rd of the mashed potatoes, next 1/3rd of the cheese then 1/3rd of the bacon. repeat again, twice. Last, top with the rest of the noodles, then the onions and butter. Bake 350F for 30 to 45 mins.
