Lebanese Lentil Soup

  • 2 cups black lentils
  • 1 bunch swiss chard or celery
  • 1 large white onion - chopped
  • 1/4 cup lemon juice
  • 1/3 cup olive oil
  • 1/2 tbsp salt
  • pepper to taste
  • ? sumac
DIRECTIONS
  1. 1.) Spread the lentils on a platter and pick them clean. Rinse and drain.
  2. 2.) Place the lentils and water into a large saucepan and place on
  3. high hear to bring to a boil. Reduce the heat to medium and
  4. cover the pan for 30-40 minutes or until the lentils are tender.
  5. 3. While the lentils are cooking, wash the celery, trim, and clean. Cut
  6. pieces approximately 1/2in wide.
  7. 4.) Add the celery to the lentils and simmer another 5-10 minutes or
  8. until the celery has softened.
  9. 5. Add the diced onions to a separate frying pan and saute them in
  10. olive oil until partially transparent.
  11. 6.) Add the sauted onions to the lentil and celery minute along with
  12. salt, sumac, and lemon juice. Simmer for an additional 5 min.
