Lemon Apricot Bars
  • Servings: 36 bars
  • Crust:
  • 1 1/2 c. flour
  • 1/2 c. confectioners' sugar
  • 3/4 c. unsalted butter, softened
  • Filling:
  • 1/2 c. apricot preserves
  • 4 eggs
  • 2 c. sugar
  • 6 Tb. lemon juice
  • 1 Tb. grated lemon peel
  • 1/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. lemon oil
  • 1/2 tsp. salt
  • confectioners' sugar to taste
  1. For the crust, mix flour and confectioners' sugar in bowl. Cut in butter 'til crumbly. Preheat oven to 350º. Press crumb mixture over bottom of 9X13" baking pan. Bake for 30 min. Let stand 'til cool. Reduce oven temp. to 325º.
  2. For the filling, spread apricot preserves over bottom of the crust. Beat eggs in a mixer bowl 'til blended. Add sugar, lemon juice, lemon peel, flour, baking powder, lemon oil and salt. Beat 'til blended. Pour over prepared layers. Bake for 35 min. Let stand 'til cool. Sprinkle with confectioners' sugar. Cut into bars.
