Lemon Basil Butter
  • Servings: 1/2 cup
  • 6 tablespoons butter, softened
  • 3 tablespoons, fresh basil, chopped
  • salt and pepper, to taste
  • 1 tablespoon lemon peel, chopped
  • lemon juice, to taste
  1. Cream butter with remaining ingredients. Melt and brush on chicken before baking or broiling. Or, chill butter in a cylinder shape, slice into rounds and serve on top of cooked chicken breast or on a fresh grilled cob of corn.
