Lemon Bundt Cake

  • 1 cup Butter
  • 1 Cup Cane Sugar
  • 1/2 Cup Granulated Sugar
  • 3 Eggs
  • 1 Tsp. Vanilla
  • 1/3 Cup Lemon Juice
  • 3 Cups All Purpose Flour
  • 2 Tsp. Baking Powder
  • 1/4 Cup Powdered Sugar for topping
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, beat together the butter and sugars.
  3. Add eggs, one at a time, beating well after each. Beat in the vanilla and lemon juice.
  4. Sift together the flour and baking powder. Add to batter and beat for 3 to 4 minutes on high.
  5. Coat a 12 cup bundt pan or 10" tube pan with nonstick cooking spray. Dust with flour.
  6. Evenly spread batter into prepared pan. Bake at 350 degrees for 35 to 40 minutes or until toothpick inserted comes out clean.
  7. Let cool in pan for 10 minutes. Gently loosen sides with a sharp knife and invert cake onto serving plate.
  8. Dust with powdered sugar.
