Lemon Chicken and Asparagus Foil Packet

  • 4 Boneless skinless chicken breasts pounded to even thickness
  • 1 large bundle of asparagus spears ( 1 pound )
  • 1 lemon divided
  • 1 teaspoon minced garlic
  • 3 tablespoons of butter ( melted )
  • 1 1/2 teaspoon Italian seasoning
  • salt and pepper to taste
  1. Lay four 12x12 squares of foil and place 1 chicken breast on each piece
  2. Clean and trim asparagus spears and cut in half. Divide them between the foil packs and place on top of the chicken.
  3. Thinly slice 1/2 of the lemon and divide between the foil packs. Tuck the slices in and around the chicken.
  4. Stir together butter, garlic, lemon juice and Italian seasoning and brush over chicken.
  5. Fold over foil packs and pinch over the ends to keep the pack closed.
  6. Grill over medium-high 10 minutes on each side or bake for 20 minutes at 400 degrees and serve.
This is a great no mess entree. I use this recipe when we go camping because it works great on a charcoal grill and can be prepared ahead of time. Submitted by: "Charae King"
