Lemon Chicken

  • Servings: 4
  • 4 boneless, skinless chicken breast halves
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon black pepper
  • 2 Tablespoons butter or margarine
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1 Tablespoon cornstarch
  • 1/4 cup thinly sliced green onions
  • Lemon peel (optional)
DIRECTIONS
  1. Place each chicken breast between 2 pieces of plastic wrap.
  2. Pound lightly with the flat side of a meat mallet
  3. Remove plastic wrap.
  4. Combine flour and pepper.
  5. Coat chicken with flour mixture.
  6. In a 12" skillet, cook chicken in hot butter over medium heat for 5 to 6 minutes or until no longer pink, turning once.
  7. Transfer chicken to a serving platter; keep warm.
  8. For sauce, combine chicken broth, lemon juice, and cornstarch; add to skillet.
  9. Cook and stir until thickened and bubbly.
  10. Cook and stir for 2 minutes more.
  11. Stir in green onions.
  12. Serve sauce over chicken.
  13. If desired, garnish with lemon peel.
