Lemon Curd (Microwave)
INGREDIENTS
  • Cooking Time: 8 minutes
  • Servings: 2 cups
  • Preparation Time: 10 minutes
  • 3 eggs
  • 1 cup sugar
  • 50gm butter
  • 1/2 cup lemon juice
  • 1 tsp lemon rind
DIRECTIONS
  1. Place eggs and sugar in a 2litre glass jug. Beat until well mixed. Add butter, lemon juice & grated lemon rind. M/wave on high power for 8 minutes, whisking every 2 minutes. Cool for a few minutes then pour into hot dry jars. Seal when cold.
