Lemon Curd (Microwave)

- Preparation Time: 10 minutes
- 3 eggs
- 1 cup sugar
- 50gm butter
- 1/2 cup lemon juice
- 1 tsp lemon rind
DIRECTIONS
- Place eggs and sugar in a 2litre glass jug. Beat until well mixed. Add butter, lemon juice & grated lemon rind. M/wave on high power for 8 minutes, whisking every 2 minutes. Cool for a few minutes then pour into hot dry jars. Seal when cold.
