Lemon Mascarpone Chicken

  • • 3 Tablespoon butter
  • • 2 Tablespoon Garlic Olive Oil
  • • 1 cup Shredded Parmesan Cheese
  • • 2 large Lemons
  • • 2 Teaspoon Lemon Zest
  • • 1 ½ cup frozen Peas (thawed)
  • • 1 Teaspoon Dill
  • • 2 Chicken Breast ( you can add more if needed)
  • • 1 Garlic Clove (grated)
  • • 1- 8oz. Mascarpone
  • • 1 package Hemistares Long Pasta Spirals
  1. Cube the Chicken and brown in a pan with the Garlic Olive oil, add salt, pepper to taste then set aside. Boil pasta (save a cup of pasta water to add to sauce later). In a new pan heat the garlic olive oil with the grated garlic, then add mascarpone until melted then add the dill, lemon juice, zest, parmesan cheese let that simmer for a few minutes. Add peas and chicken and reserved pasta water until heated through. Add the cooked pasta to the mix until pasta is coated, then serve, you can also add more fresh parmesan cheese to top.
