Lemon Pepper Fettucine Pesto with a Twist

INGREDIENTS
  • 8 oz. fettucine
  • 2 lrg. garlic cloves
  • grated zest of 1 lemon
  • 2 c. fresh basil
  • 1/4 c. olive oil
  • 1/3 c. freshly grated Parmesan
  • 1/2 tsp. salt
  • fresh ground black pepper
DIRECTIONS
  1. Using a food processor, process the garlic, lemon zest & basil leaves until combined. With machine running, pour the olive oil in a thin, steady stream. Transfer the pesto into serving bowl & set aside.
  2. Cook pasta. Drain & immediately add it to the pesto. Add Parmesan, salt & pepper. Toss everythig together gently. Serve @ once.
  3. Yield: 2 - 4 servings
RECIPE BACKSTORY
Lemon pepper pasta is hard for me to find, so when I do, I try to stock up. But when that runs out, I just use plain old boring fettucine! Either way, this has to be one of my favorite pasta dishes. Especially with garden fresh basil!! It just doesn't get any better than this!! Enjoy!!
