Lemon Pudding Cake

  • 1/4 cup sifted flour
  • 1 cup sugar
  • 1/4 tsp. salt
  • 1 1/2 tsps. grated lemon rind
  • 1/4 cup lemon juice
  • 2 eggs, separated
  • 1 cup evaporated milk
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Sift dry ingredients together. Stir in lemon rind,juice and well beaten egg yolks and milk. Fold in stiffly beaten whites. Pour into 8 inch casserole: set casserole in pan of hot water. Bake at 350 degrees for 40 to 45 minutes.
