Lemon Roasted Chicken Breasts
  • 4 large chicken breasts (with skin and bone)
  • 2 C flour
  • 1 T lemon pepper seasonong
  • 2 t. thyme
  • 1/4 C olive oil
  • 1 stick butter
  • 1/2 C lemon juice (use fresh lemons, and cut the lemons in 1/8ths when done juiceing)
  1. Preheat oven to 350*. Mix flour, lemon pepper and thyme in a shallow dish. Heat oil in large skillet at medium-high. Dredge chicken pieces in flour mixture and brown well on all sides in oil. Move to a roasting pan or large casserole dish. Add butter to oil in skillet and melt. Add lemon juice and lemons to oil and butter, mix well,, and pour over chicken pieces. Roast, uncovered, in oven until cooked through, about 30 minutes, depending on the size of your chicken breats.
