Lemon Roasted Chicken

  • 4 lb whole chicken
  • 2 whole lemons
  • 2 cloves crushed garlic
  • 2 sprigs fresh thyme
  • Kosher Salt
  • Pepper
DIRECTIONS
  1. Heat oven to 350
  2. Wash chicken and pat dry
  3. Season inside and outside of chicken with salt and pepper
  4. Roll lemons on a hard surface and then pierce several times with a fork
  5. Place lemons, thyme and garlic inside chicken cavity
  6. Tie legs together with butchers twine
  7. Place chicken breast side down on rack in roasting pan
  8. Tuck wings under body cavity
  9. Roast chicken 45 mins
  10. Remove and baste with melted butter
  11. Return to oven and bake 20-30 mins more until juices run clear or meat therm. reaches 190 degrees
