Lemon Spinach
INGREDIENTS
- 4 boxes of the frozen (pictsweet type) frozen spinach
- 2 lemons
- olive oil
- salt and pepper to taste
DIRECTIONS
- Boil spinach until it isn't frozen anymore.
- Drain, wring, whatever is necessary to get out all the water.
- Put into a bowl that has a lid
- Squeeze the juice of the lemons into the spinach.
- Drizzle with Olive Oil
- Salt and Pepper to taste
- Stir well to incorporate flavors.
- Place in refigerator to get cold.
- Always stir before serving (settling occurs in refrig)
- This amount serves about 6. Very easy to adjust it really is to taste.
