Lemon Squares

INGREDIENTS

  • 2 cups butter
  • 4 cups whole weat flour
  • 1 cup powdered sugar
  • 8 Tablespoons flour
  • Grated rind of 2 lemons
  • 4 cups sugar
  • 2 teaspoons baking powder
  • 8 eggs
  • 12 Tablespoons lemon juice
DIRECTIONS
  1. Mix butter with flour and powdered sugar.
  2. Pat into a 12 x 19 inch baking pan and bake at 350ºF for 15 minutes.
  3. In a large bowl mix 4 cups sugar, 8 tablespoons flour and baking powder.
  4. Beat eggs slightly and add to sugar mixture; add lemon juice and rind.
  5. Pour mixture over baked pastry, tilt pan to spread.
  6. Bake for 20 minutes at 350ºF.
  7. Sprinkle with powdred sugar,
