Lemon Thins

  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 1 1/2 tbls lemon juice
  • 2 tsp grated lemon peel
DIRECTIONS
  1. Cream shortening and sugar
  2. Beat in egg, lemon juice and lemon peel
  3. Stir in dry ingredients
  4. Shape into two 6 inch rolls, wrap in waxed paper and chill overnight
  5. Slice 1/8 inch thick, place on ungreased cookie sheet
  6. Bake at 350 or until edges are golden brown, 11-12 minutes
