Lemon Upside Down Pudding

- Preparation Time: 15 minutes
- 2 1/4 tbsp flour
- 3/4 cup sugar
- 1 tbsp butter
- 1/4 tsp salt
- 2 Eggs, separated and beaten
- 1/4 cup lemon juice
- 1 cup milk
DIRECTIONS
- Combine Flour, sugar and salt with softened butter.
- Add Egg yolks, lemon juice and milk.
- Then fold in stiffly beaten egg whites.
- Pour into buttered Casserole dish.
- Set in pan of warm water.
- Bake at 375 until top is firm.
- Turn upside down onto dish or serving try.
- (Bottom of this pudding will be a lemon sauce that will spread out over top of pudding when turned over!)
