Lemon Velvet Cake

- 2 1/2 cups Flour
- 1 1/2 cup Sugar
- 1/3 cup Water
- 1/2 cup Butter
- 1/4 cup Orange Juice
- 3 Tablespoons Lemon Juice
- 3 teaspoons Baking Powder
- 1 teaspoon Lemon Zest
- 1/2 teaspoon Orange Rind (Grated)
- 1/2 teaspoon Salt
- 3 Large Eggs
DIRECTIONS
- Take a large mixing bowl and combine the flour, salt and baking powder.
- In a separate bowl, cream the butter. Add the eggs and sugar, whisk until smooth.
- Using a small bowl, combine the lemon and orange juice with the water. Then add the other 2 mixtures and mix well until smooth and lump free. Turn onto a greased cake pan. Bake in a preheated oven at 350 F for about half an hour.
- You can make a quick glaze for the top of the Lemon Velvet Cake by mixng together a couple tablespoons of butter, some water, lemon juice, sugar and vanilla.
