Lemon Velvet Cake
  • 2 1/2 cups Flour
  • 1 1/2 cup Sugar
  • 1/3 cup Water
  • 1/2 cup Butter
  • 1/4 cup Orange Juice
  • 3 Tablespoons Lemon Juice
  • 3 teaspoons Baking Powder
  • 1 teaspoon Lemon Zest
  • 1/2 teaspoon Orange Rind (Grated)
  • 1/2 teaspoon Salt
  • 3 Large Eggs
  1. Take a large mixing bowl and combine the flour, salt and baking powder.
  2. In a separate bowl, cream the butter. Add the eggs and sugar, whisk until smooth.
  3. Using a small bowl, combine the lemon and orange juice with the water. Then add the other 2 mixtures and mix well until smooth and lump free. Turn onto a greased cake pan. Bake in a preheated oven at 350 F for about half an hour.
  4. You can make a quick glaze for the top of the Lemon Velvet Cake by mixng together a couple tablespoons of butter, some water, lemon juice, sugar and vanilla.
You can use the cream cheese icing, like on a red velvet or the glaze at the end of this recipe
