Lemon Yogurt Cake
  • 1/2 C flour
  • 2 t baking powder
  • 1/2 t salt
  • 1 cup plain yogurt
  • 1 and 1/3 C sugar
  • 3 large eggs
  • 2 t grated lemon zest
  • 1/2 t vanilla extract
  • 1/2 C vegetable oil
  • 1/3 C lemon juice
  • 1 C confectioners sugar
  • 2 T lemon juice
  1. Mix together all the dry ingredients and set aside. Mix together yogurt, 1 C of the sugar, the eggs, lemon zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients. Fold in the oil and make sure it is incorporated. Pour the batter into a greased loaf pan and bake for 50 minutes at 350 degrees.
  2. Cook the 1/3 C lemon juice and remaining 1/3 C of sugar in a small saucepan until the sugar dissolves and mixture is clear.
  3. When the cake is done, pour the sugar mixture over the cake and allow it to soak in. Let cool and remove from pan. and place on a baking rack with a sheet pan underneath it.
  4. Combine the confectioners sugar and lemon juice. Pour the glaze over the cake. Let glaze harden, and enjoy
