Lemon Zucchini Muffins

  • 2 cups flour
  • ½ cup sugar
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon grated lemon peel
  • ½ teaspoon nutmeg
  • ½ cup chopped nuts
  • ½ cup raisins
  • 2 eggs
  • ½ cup milk
  • 1/3 cup oil
  • 1 cup packaged zucchini (not drained)
DIRECTIONS
  1. In large bowl, mix flour, sugar, baking powder, salt, lemon peel, and nutmeg.
  2. Stir in nuts and raisins.
  3. In small bowl, beat eggs with fork; beat in milk and oil.
  4. Add to flour mixture, then sprinkle zucchini on top.
  5. Stir until becomes blended.
  6. Fill greased pans 2/3 full.
  7. Bake at 400-degrees for 15-25 minutes.
