Lemon Zucchini
  • 3 or 4zucchini
  • 1 or 2 lemons
  • salt and pepper
  • chopped parsley
  • 1tsp extra virgin olive oil
  • 1 clove garlic, chopped
  1. Wash your zucchini. Thinly slice them (should be 2 millimeters thick, no more) Prepare marinade w/ the juice & pulp of your lemons,salt,pepper,garlic,parsley & olive oil. Put a layer of zucchini in a bowl and pour a little marinade on top. Repeat for each layer. Keep the bowl in a cool place and let rest for 6-8 hrs, occasionally coating the top layer w/ the marinade from the bottom. Grill the zucchini for a couple of minutes (until tender) Keep the marinade & use it as a dressing when done.
