Lemon wafers

  • 1 cup butter
  • 1/2 tsp salt
  • 2 cups sugar
  • Pinch of ginger
  • 3 eggs, slightly beaten
  • 3 tbls lemon juice
  • Approx 3 cups sifted flour
DIRECTIONS
  1. Cream butter until light
  2. Gradually add sugar and beat until light and fluffy
  3. Beat in eggs, lemon juice, salt and tiny pinch of ginger
  4. Blend well
  5. Add enough flour to make a firm dough for rolling out
  6. Roll out thinly and cut out small rounds
  7. Bake on buttered cookie sheet 2 inches apart in a 350 oven for 10-12 minutes
