Lemony squares

- 20 Nilla wafers finely crushed
- 1/2 c flour
- 1/4 c firmly packed brown sugar
- 1/2 stick cold margarine
- 1 pkg. Neufchatel cheese
- 1 c granulated sugar
- 2 eggs
- 2 T flour
- 3 T grated lemon peel
- 1/4 C fresh lemon juice
- 1/4 tsp. baking powder
- 2t. powdered sugar
DIRECTIONS
- Preheat oven to 350 degrees. Line 8 inch baking pan with foil, with ends extending over sides of pan. Set aside. Combine wafer crumbs, 1/2 c flour and brown sugar in a medium bowl. Cut in margarine with a pastry blender until mixture resembles coarse crumbs. Press firmly onto bottom of prepared pan. Bake 15 minutes.
- Meanwhile, beat cheese and sugar with an electric mixer on medium speed until well blended. Add eggs, and 2 T flour, mix well. Blend in 1 T of the grated peel, lemon juice and baking powder. Pour over crust.
- Bake 25-28 minutes or until center is set. Cool completely. Cover and refrigerate at least 2 hours. May garnish with rest of the peel and powdered sugar.
