  • 20 Nilla wafers finely crushed
  • 1/2 c flour
  • 1/4 c firmly packed brown sugar
  • 1/2 stick cold margarine
  • 1 pkg. Neufchatel cheese
  • 1 c granulated sugar
  • 2 eggs
  • 2 T flour
  • 3 T grated lemon peel
  • 1/4 C fresh lemon juice
  • 1/4 tsp. baking powder
  • 2t. powdered sugar
DIRECTIONS
  1. Preheat oven to 350 degrees. Line 8 inch baking pan with foil, with ends extending over sides of pan. Set aside. Combine wafer crumbs, 1/2 c flour and brown sugar in a medium bowl. Cut in margarine with a pastry blender until mixture resembles coarse crumbs. Press firmly onto bottom of prepared pan. Bake 15 minutes.
  2. Meanwhile, beat cheese and sugar with an electric mixer on medium speed until well blended. Add eggs, and 2 T flour, mix well. Blend in 1 T of the grated peel, lemon juice and baking powder. Pour over crust.
  3. Bake 25-28 minutes or until center is set. Cool completely. Cover and refrigerate at least 2 hours. May garnish with rest of the peel and powdered sugar.
