Lentil Soup

- 3 T olive oil
- 1 onion, chopped
- 1 stalk of celery, chopped
- 1 cup carrots, sliced
- 1 T garlic powder
- 1 T dried parsley
- 1/2 tsp dried oregano
- 1/4 tsp ground thyme
- 1/2 tsp dried basil
- 2 tsp Kosher salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes
- 8 cups water
- 1 lb. dried lentils, washed
DIRECTIONS
- In a heavy stock pot, saute the onions and celery in olive oil over medium-high heat until they are soft.
- Add the carrots and seasonings to the pot and cook for 3-4 minutes, stirring frequently.
- Add the water and bring to a boil.
- Add the lentils, stir, and simmer on low heat for 2 hours, stirring occasionally.
