Lentil Soup

  • 3 T olive oil
  • 1 onion, chopped
  • 1 stalk of celery, chopped
  • 1 cup carrots, sliced
  • 1 T garlic powder
  • 1 T dried parsley
  • 1/2 tsp dried oregano
  • 1/4 tsp ground thyme
  • 1/2 tsp dried basil
  • 2 tsp Kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 8 cups water
  • 1 lb. dried lentils, washed
DIRECTIONS
  1. In a heavy stock pot, saute the onions and celery in olive oil over medium-high heat until they are soft.
  2. Add the carrots and seasonings to the pot and cook for 3-4 minutes, stirring frequently.
  3. Add the water and bring to a boil.
  4. Add the lentils, stir, and simmer on low heat for 2 hours, stirring occasionally.
