INGREDIENTS

  • 2 med cucumbers peeled and thinly sliced
  • 2 lb. tomatoes sliced 1/4 in. thick
  • 1 large onion thinly sliced
  • 1 cup coarsely crumbled feta cheese
  • % cup Kalamata olives, Pitted and halved lengthwise
  • 3 Tbs extra-virgin olive oil
  • 7z tsP dried oregano
  • Y8 tsP cayenne
  • Flake sea salt
DIRECTIONS
  1. Around rim of a large platter' alternate slices of cucumbers
  2. and tomatoes, spiraling inward' Scatter onion' feta and
  3. olives over top' Drizzle with oil' Sprinkle with oregano'
  4. cayenne and salt. Serves 6
