Lime Garlic Chicken
  • 1 1/2 lbs bone-in skinless chicken thighs
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 1/2 cups chicken broth
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon dried thyme leaves (I'm not a huge thyme fan so i'll either omit this or use basil instead)
  • 1/4 teaspoon pepper
  • 2 tablespoons butter or margarine
  • 1 cup uncooked brown rice
  1. Place chicken in 3-4 quart slow cooker. Add remaining ingredients except rice.
  2. Cover and cook on low heat setting for 8 - 10 hrs. During last hour of cooking, stir in rice.
  3. Remove chicken from cooker. place cooked rice on each serving plate. Top with chicken. Spoon any remaining juices over chicken.
  4. Serve with tossed green salad or steamed vegetables.
  5. Betty's tip: Bone-in chicken works best in slow cookers. The bones help keep the chicken in one piece during the long cooking time.
