Lime Marinated Steak
  • 1/4 cup fresh lime juice (about 3 limes)
  • 1 orange, juiced
  • 3 garlic cloves, smashed
  • 1/2 cup olive oil
  • Coarse salt and freshly ground black pepper
  • 1 (2-pound) flank steak (or similar), fat removed
  1. *Place the lime juice, orange juice, garlic, olive oil and salt and pepper in a large plastic bag over a shallow baking dish, or directly in the dish
  2. *Add the steak and turn to coat both sides
  3. *Cover and refrigerate for at least 30 minutes, then pull from fridge and allow the steak to come to room temperature, about 10 minutes
  4. *Heat the grill to medium-high heat
  5. *Remove the steak from the marinade and season both sides with salt and pepper
  6. *Grill for 5 to 7 minutes on each side for medium-rare
  7. *Let rest 10 minutes
  8. *Slice the steak against the grain, into thin slices
