Lime Soda with Mint
  • 1 cup mint apple jelly
  • 1/2 cup water
  • Lime sherbet
  • Vanilla ice cream
  • lemon-lime beverage, carbonated and chilled
  1. In a saucepan, combine the jelly and water. Cook and stir over low heat until the jelly dissolves completely. Cool, then chill.
  2. Place 3 tablespoons of the mint jelly syrup into a large glass (about 14 ounce size). Add a spoonful of sherbet and stir until melted. Add a scoop of vanilla ice cream, a scoop of lime sherbet, then another scoop of vanilla ice cream. Fill the glass with the lemon-lime carbonated beverage, pouring down the side of the glass. Garnish with lime slices and a mint sprig if desired. Serve with a straw and a long handled spoon.
