Lime Zingers
INGREDIENTS

  • 2 ½ cups flour
  • ¼ tsp. baking powder
  • ¼ tsp. salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup sugar
  • 2 egg yolks
  • 1 tsp. vanilla
  • 2 Tbsp. grated lime rind
  • 2 Tbsp. lime juice
DIRECTIONS
  1. Combine flour, baking powder and salt; set aside. With electric mixer, beat butter and sugar until fluffy; beat in egg yolks and vanilla.
  2. Gradually beat in flour mixture.
  3. Add grated lime rind and lime juice stirring well.
  4. Preheat oven to 375º.
  5. Shape dough into 48 balls, using 1 tablespoon dough for each.
  6. In a small bowl, combine 1 tablespoon grated lime rind and ½ cup sugar, working rind into the sugar with the back of a spoon until well blended.
  7. Roll balls in sugar mixture and place 1 inch apart on parchment lined baking sheets.
  8. Bake until edges are lightly browned, 12 minutes. Cool on wire racks.
  9. Makes 4 dozen cookies.
