Linguine with Spicy Artichoke Sauce
INGREDIENTS

- 1 T olive oil
- 6 garlic cloves, minced
- ¼ t crushed red pepper flakes
- 1 28-oz can plum tomatoes, chopped and drained
- ½ t dried basil
- ½ t dried oregano
- ½ t salt
- 1 6-oz jar marinated artichoke hearts
- ¼ cup minced fresh parsley
- 1 lb Linguine
- Grated parmesan cheese
DIRECTIONS
- Heat oil in a large skillet over medium heat. Add garlic and pepper flakes and cook 2 minutes, stirring often. Stir in tomatoes, basil, oregano, and salt and bring to a boil. Reduce to a simmer and cook, stirring often, for 15 minutes.
- Add artichokes and their marinade to the sauce. Stir in the parsley. Simmer about 5 minutes.
- Toss sauce with about cooked linguine and serve with parmesan cheese.
