Linguine with Spicy Artichoke Sauce

  • 1 T olive oil
  • 6 garlic cloves, minced
  • ¼ t crushed red pepper flakes
  • 1 28-oz can plum tomatoes, chopped and drained
  • ½ t dried basil
  • ½ t dried oregano
  • ½ t salt
  • 1 6-oz jar marinated artichoke hearts
  • ¼ cup minced fresh parsley
  • 1 lb Linguine
  • Grated parmesan cheese
DIRECTIONS
  1. Heat oil in a large skillet over medium heat. Add garlic and pepper flakes and cook 2 minutes, stirring often. Stir in tomatoes, basil, oregano, and salt and bring to a boil. Reduce to a simmer and cook, stirring often, for 15 minutes.
  2. Add artichokes and their marinade to the sauce. Stir in the parsley. Simmer about 5 minutes.
  3. Toss sauce with about cooked linguine and serve with parmesan cheese.
