Linguini W/ Butter, Cheese, Arugula And Pepper

  • 1 pound linguini
  • 1/2 stick butter, room temp
  • 1 1/4 cups finely grated pecorino romano
  • 1 1/2 teaspoon black pepper
  • 1 cup chopped arugula
DIRECTIONS
  1. Bring large pot of salted water to a boil. Add linguini.
  2. Cook about 8 min
  3. Drain, reserving 1 cup of the cooking liquid.
  4. Immediately toss the hot pasta in a large bowl with the butter to coat. Gradually add the cheese, pepper, and cooking liquid over the linguini. Add the arugula. Season the pasta to taste with salt.
