Lithuanian Cold Beet Soup

  • 4 Jars Shoestring Beets
  • 2 Bunches of Green Onions
  • 6 Hard Boiled Eggs
  • 2 Cucumbers
  • 16 Oz Sour Cream
  • Salt (to taste)
  • 2 sprigs of fresh dill, chopped
  • 1Tsp of vinegar
  1. Chop the tops (green part) of the green onions
  2. Chop the boiled eggs
  3. Mix all of the ingredients, except vinegar
  4. Fill the sour cream container with water and add the vinegar, mix
  5. Pour the water and vinegar mixture into the rest of the ingredients
  6. Add more water to cover and mix well
  7. Chill for one day before serving
This Lithuanian soup was a favorite of my Dad's and Brother's! So much so that my Brother learned to make this so he could have it at any time. My Gramma Monica was a first generation immigrant from Lithuania who made her way to the United States and settled in Chicago.
