Little Italy Chicken
  • 4 potatoes, diced
  • 1 lb. boneless, skinless chicken breasts
  • 1/2 cup spicy Italian salad dressing
  • 1/4 tsp. pepper
  1. Place the potatoes on the bottom of the crockpot, then drizzle with half of the dressing. Top with the chicken, and drizzle with remaining dressing and pepper. Cover crockpot and cook for 6-8 hours on low until potatoes are tender and chicken is thoroughly cooked. Serve with rice. Makes 6 servings.
