Loaded Baby Reds
  • 1 lb Red Potatoes, Cut Into Chunks
  • 1 pkg Cream Cheese, Softened
  • 1 cup Shredded Cheddar Cheese
  • 3 Tbsp Bacon Bits
  • 1 tsp Cayenne Pepper
  • 2 tsp Garlic Powder
  • 1/4 tsp Parmesan, Grated
  1. *Place potatoes into a large pot and cover with lightly salted water; bring to a boil, then reduce heat to medium-low - cover and simmer until tender, about 20 minutes
  2. *Drain and allow to steam dry for a minute or two
  3. *Mash the potatoes until smooth, then add the cream cheese, cheddar cheese, bacon, cayenne pepper, and garlic powder; mash until the ingredients are well blended, then transfer to a serving dish
  4. *Sprinkle with parmesan cheese to garnish
