Loaded Cauliflower Casserole

  • 2 Cups Shredded Chicken ( rotisserie for easy prep)
  • 12 oz. Frozen Cauliflower Rice (uncooked)
  • 4 Strips of bacon cooked and crumbled ( not overly crispy)
  • 1 Tsp. Italian seasoning
  • 1/2 Tsp. Salt
  • 1/2 Cup Cream Cheese (softened)
  • 1 Cup Shredded Cheddar Cheese
  1. Preheat oven to 350 degrees.
  2. Grease a casserole dish (round or 9x9).
  3. Mix all ingredients, reserve 1/2 Cup of Cheddar Cheese.
  4. Add mix to the casserole dish and top with remaining cheese.
  5. Bake for 20 min or until hot and bubbly.
This cheesy loaded cauliflower casserole is a quick and easy low carb and keto side dish you will be making over and over again! We use riced cauliflower for maximum cheese to cauliflower ratio and of course, everything is better with bacon! (As is true of all bacon in these recipes, be sure NOT to over-crisp as it becomes dangerous to brackets the crunchier it gets.)
