Loaded Fruit oatmeal Pancake

  • Preparation Time: 5minutes
  • 1/2 cup plain oatmeal or 1 pkg of any flavor oatmeal
  • 2 tbs of vanilla extract
  • Optional: 1 tsp of a fruit flavor extract
  • fruit of your choice. I prefer blueberries and banana with a little banana extract
  • 3 egg whites or 2 servings of egg beaters
  • A pinch of water
  • Optional a pinch of sugar or sugar substitute
  • Powdered sugar
  • Sugar free maple syrup
  1. In a bowl mix all ingredients till well blended.
  2. Pour into a stovetop pan cook until one side turns a golden color.
  3. Flip pancake until other side is golden
  4. Sprinkle with a dusting of powdered sugar
  5. Serve with or without sugar free maple syrup
