Loaded Potato Soup

INGREDIENTS
  • 6 large baking potatoes, peeled and cubed
  • 1/2 large onion, chopped
  • 1 at chicken broth
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 2 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 cup cream or half and half
  • 2 cups shredded sharp cheddar
  • Chopped fresh chives
  • Sour cream (optional)
  • 8 slices bacon, fried and crumbled (can use packaged bacon pieces)
  • Cheese for sprinkling
DIRECTIONS
  1. Combine first 7 ingredients in a large crockpot; cover and cook on high for 4 hours or low for 8 hours (until potatoes are tender)
  2. Mash mixture until soupy and slightly thickened. Stir in cream, cheese and chives.
  3. Top with sour cream(if used), bacon and cheese.
