Loaded Potato Soup

INGREDIENTS
- 6 large baking potatoes, peeled and cubed
- 1/2 large onion, chopped
- 1 at chicken broth
- 2 cloves garlic, minced
- 1/4 cup butter
- 2 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 cup cream or half and half
- 2 cups shredded sharp cheddar
- Chopped fresh chives
- Sour cream (optional)
- 8 slices bacon, fried and crumbled (can use packaged bacon pieces)
- Cheese for sprinkling
DIRECTIONS
- Combine first 7 ingredients in a large crockpot; cover and cook on high for 4 hours or low for 8 hours (until potatoes are tender)
- Mash mixture until soupy and slightly thickened. Stir in cream, cheese and chives.
- Top with sour cream(if used), bacon and cheese.
