Lobster Rolls

  • 1/2 C nonfat plain Greek style yogurt OR 2/3 C regular plain non fat yogurt
  • 3 Tbl Mayo
  • 1 Stalk Celery finely chopped
  • 1 Green Onion, finely chopped
  • 1 TBL Fresh Lemon Juice
  • 1 LB cooked lobster or shrimp
  • 4 whole wheat hot dog buns
  • 1 TBL Extra Virgin Olive Oil
  • Salt and Pepper
DIRECTIONS
  1. If using regular yogurt, place in a strainer lined with paper towels, set strainer in bowl and drain 20 mins.
  2. In a bowl stir yogurt, mayo, celery, onion and lemon juice
  3. Fold in lobster
  4. Season with salt and pepper
  5. Chill for 20 minutes
  6. Open hot dog buns
  7. Brush buns with olive oil and grill until toasted
  8. Fill with lobster mixture and serve immediately
