Lobster Rolls
INGREDIENTS

- Preparation Time: 30 mins
- 1/2 C nonfat plain Greek style yogurt OR 2/3 C regular plain non fat yogurt
- 3 Tbl Mayo
- 1 Stalk Celery finely chopped
- 1 Green Onion, finely chopped
- 1 TBL Fresh Lemon Juice
- 1 LB cooked lobster or shrimp
- 4 whole wheat hot dog buns
- 1 TBL Extra Virgin Olive Oil
- Salt and Pepper
DIRECTIONS
- If using regular yogurt, place in a strainer lined with paper towels, set strainer in bowl and drain 20 mins.
- In a bowl stir yogurt, mayo, celery, onion and lemon juice
- Fold in lobster
- Season with salt and pepper
- Chill for 20 minutes
- Open hot dog buns
- Brush buns with olive oil and grill until toasted
- Fill with lobster mixture and serve immediately
