Lobster Salad on Lettuce

INGREDIENTS
  • two 1 1/2 lb. live lobsters
  • 1 Tbsp coarse grained mustard
  • 1 Tbsp red wine vinegar
  • 1 tsp water
  • 1 Tbsp grated onion
  • 2 Tbsp fresh lemon juice
  • 1/4 tsp. sugar
  • 1 Tbsp vegetable oil
  • 1 Tbsp minced fresh parsley
  • 3/4 cup chopped celery
  • 3 Tbsp mayonnaise
  • 1 tsp dry sherry
DIRECTIONS
  1. Boil and remove meat from lobsters. Chop into pieces and set aside. In a separate bowl whisk together remaining ingredients except for celery mayonnaise and sherry. Add lobster meat and chill 1 hour. Stir in the celery, mayonnaise, sherry, and salt and pepper to taste. Spoon onto lettuce leaves or serve on bread.
