Lori's Mexican Rice

  • 2 c short grain rice
  • 2 T canola oil
  • 1/2 c onion chopped
  • 2T roasted garlic
  • 1 tomato chopped
  • 1 t salt
  • 1 t pepper
  • 1 14 oz can chicken broth
  1. Toast uncooked rice in a frying pan coated with oil until rice is golden brown
  2. Caramelize onion and add roasted garlic when onion is cooked
  3. When all ingredients have cooled, put in rice cooker with tomato
  4. Add salt and pepper
  5. Add chicken broth and additional water if necessary
  6. Put in rice cooker and cook normally
When my cousin's wife first made this, my mom went totally crazy over it! I have added my little changes, but the same flavor is still there, and I stayed true to her original recipe
