Louise Spitzer's 9 Minute Microwave Brittle
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1 cup peanuts or any nut you like
  • 1 teaspoon vanilla
  • 1 Tablespoon butter
  • 1 teaspoon baking powder
  1. use large glass bowl and wood or metal spoons (this gets really hot)
  2. 1 cup sugar
  3. 1/2 cup light corn syrup
  4. mix well and microwave for 4 minutes
  5. add and stir
  6. 1 cup peanuts or any nut you like
  7. microwave for 3 minutes
  8. add and stir
  9. 1 teaspoon vanilla
  10. 1 Tablespoon butter
  11. microwave 2 minutes
  12. add and stir
  13. 1 teaspoon baking powder
  14. Be careful, it will foam, pour on to a buttered cookie sheet
  15. cool. (I put them in the freezer) Crack and eat, won't last long
  16. Pour onto a cookie sheet and allow to cool. Break apart when set.
I have made peanut brittle for special occasions for many years, but never tried it in the microwave before, but this recipe is so simple it may become my new favorite method.
