Low Carb Squash Casserole

  • Servings: 4-6
  • 1 to 2 pounds of squash
  • 6 slices of bacon - crumbled
  • one small onion
  • 4 ounces sharp cheddar cheese, shredded
  • 1 egg, beaten
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon salt, or to taste
  1. 1. In a large pot, cook the squash in boiling salted water to cover just until tender, about 8-10 minutes.
  2. 2. Drain well and press between paper towels to remove the excess moisture.
  3. 3.Meanwhile, in a small skillet, fry the bacon crumbled and toss in the onions and cook until tender.
  4. 4.Remove from the heat and stir in all but the squash.
  5. 5.Combine everything in a greased 1 1/2 quart baking dish. Bake at 350ยบ 30-40 minutes or until set and the top is bubbly and starting to brown.
