Low Fat Quick Refried Beans
INGREDIENTS
  • Cooking Time: 10
  • Servings: 2-4
  • Preparation Time: 5
  • 2-3 cups soaked pinto beans, or 1-2 cans drained pinto beans
  • About 1/4 cup red onion
  • 1 garlic clove
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • About 1/4 cup water
DIRECTIONS
  1. In a blender, combine all ingredients together except water.
  2. Give the mixture a few good pulses until just blended, or blend on the lowest setting. You want the mixture to have chunks and not be completely liquified. Add water until desired consistency is reached.
  3. Pour bean mixture into a frying pan on medium heat and heat through.

I discovered this awesome and delicious way to make Refried Beans with out the "refry". They are so easy and free of oil and lard found traditionally in most Refried beans.
