Low carb pizza with cheese crust
INGREDIENTS

  • Dough
  • ½ cup almond flour
  • ½ cup coconut flour
  • 2 cups mozzarella cheese
  • 1 tbsp psyllium husk powder
  • 4 tbsp cream cheese
  • 1 egg
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1 tsp black pepper
  • Topping
  • 1 cup mozzarella cheese (or more if you like it extra cheesy)
  • ½ cup tomato sauce (preferably home made, no sugar added)
  • anything else you like on top of a pizza
DIRECTIONS
  1. Preheat oven to 420 degrees Fahrenheit
  2. Add the 2 cups of mozzarella cheese to a micowave-safe bowl and microwave high for around 1 minute
  3. Add the cream cheese and the egg and blend well
  4. Add almond and coconut flour, psyllium husk, spices/herbs and mix well
  5. Once cooled, form into a ball
  6. Between two sheets of baking parchment, flatten the ball and form into a circular shape
  7. Place the ball on a baking sheet and punch some holes with a fork
  8. Bake for 8-9 minutes
  9. Flip the dough over and bake for another 6-7 minutes (or until golden brown)
  10. Remove the dough from the oven and spread tomato sauce on top
  11. Add cheese and your favourite toppings
  12. Bake again just until the cheese is melted
