Lynne's Chocolate Chip Oatmeal Cookies

  • 1/2 cup shortening
  • 1/2 cup butter, room temperature
  • 3/4 cup sugar
  • 3/4 cup firmly packed dark brown sugar
  • 2 eggs
  • 1 pkg. (4-serving size) instant vanilla pudding mix
  • 1 Tbsp. vanilla
  • 1 tsp. baking soda
  • 1 tsp. water
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1 cup old fashioned oats
  • 2-1/4 cups flour
  • 1 pkg. (12 oz.) chocolate chips
  • 1-1/2 cups chopped walnuts
DIRECTIONS
  1. Preheat oven to 375ºF.
  2. Grease cookie sheets.
  3. Beat shortening and butter in a large bowl until light.
  4. Gradually add white and brown sugar, beating until light and fluffy.
  5. Add eggs, one at a time, beating after each addition.
  6. Add pudding mix, vanilla extract, baking soda,water, ground cinnamon, ground nutmeg, salt, flour and oats (may be ground to a fine powder). Mix until blended.
  7. Stir in chocolate chips and walnuts.
  8. Drop by large rounded spoonfuls(about3 Tbsp. each) onto prepared cookie sheets, about 2 inches apart. Bake until cookies appear dry and tops are lightly cracked, yet soft when pressed (about 12 min.)
  9. Do not overbake.
  10. Cook cookies 5 minutes on cookie sheets before removing to wire rack.

My friend Lynne shared this recipe with me and it is a family favorite. You can vary the flavor of pudding mix you use and I whiz my oats in the blender until fine because my DS doesn't like oats. chefly
