Lynne's Chocolate Chip Oatmeal Cookies
INGREDIENTS

- 1/2 cup shortening
- 1/2 cup butter, room temperature
- 3/4 cup sugar
- 3/4 cup firmly packed dark brown sugar
- 2 eggs
- 1 pkg. (4-serving size) instant vanilla pudding mix
- 1 Tbsp. vanilla
- 1 tsp. baking soda
- 1 tsp. water
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt
- 1 cup old fashioned oats
- 2-1/4 cups flour
- 1 pkg. (12 oz.) chocolate chips
- 1-1/2 cups chopped walnuts
DIRECTIONS
- Preheat oven to 375ºF.
- Grease cookie sheets.
- Beat shortening and butter in a large bowl until light.
- Gradually add white and brown sugar, beating until light and fluffy.
- Add eggs, one at a time, beating after each addition.
- Add pudding mix, vanilla extract, baking soda,water, ground cinnamon, ground nutmeg, salt, flour and oats (may be ground to a fine powder). Mix until blended.
- Stir in chocolate chips and walnuts.
- Drop by large rounded spoonfuls(about3 Tbsp. each) onto prepared cookie sheets, about 2 inches apart. Bake until cookies appear dry and tops are lightly cracked, yet soft when pressed (about 12 min.)
- Do not overbake.
- Cook cookies 5 minutes on cookie sheets before removing to wire rack.
