INGREDIENTS
  • Penne - 1 lb cooked.
  • butter in skillet
  • 1 med size chopped ONION
  • 1 med size chopped tomato
  • shredded cheese - mont jack, cheddar, mozz - what ever you have left over from taco nite
DIRECTIONS
  1. This variation on the traditonal Mac and Cheese is my daughter's favorite and my son's nightmare .. here's why: ONIONS and TOMATO.
  2. Easy to make - 5 ingredients and no milk.
  3. Penne - 1 lb cooked.
  4. On Med setting, melt some butter in skillet, add chopped ONION (1 med size). Sautee about 3-5 min to soften.
  5. Add chopped tomato (1 med size) and mix together. Reduce the heat. Add a bunch of shredded cheese - mont jack, cheddar, mozz - what ever you have left over from taco nite - and then add in cooked penne. Mix it all up, serve immed. Really great taste - enjoy!
